Tomato Ingegnoso
A tomato base that encompasses a whole range of vegetables.
Servings 12 servings, plus extra to freeze
Ingredients
- 2 Carrots diced
- 1 Butternut squash diced
- 100 g Frozen peas
- 2 tins Baked beans
- 3 tins Chopped tomatoes
- 1 tsp Turmeric
- ½ tsp Sweet paprika
Instructions

Boil the diced carrots and squash, as well as the peas, for 10 minutes.

Blend together the vegetables, beans in their sauce, tomatoes and spices, in batches if needed.

Add sauce back to pan and puree until smooth.
