Eggless Waffles

Waffles that don’t rely on any egg to make a nice fluffy rise with a slightly crispy outer. These were developed specifically for toddlers and babies so are low in sugar, but if you want a slightly sweeter waffle then double the quantity of sugar used, or just top them with something nice.

Eggless Waffles

Ingredients

  • 200 g Plain flour ensure freshness
  • 1 tbsp Baking powder ensure freshness
  • 20 g Caster sugar
  • ½ tsp Salt
  • 300 ml Milk Whole milk if possible, though semi skimmed will do.
  • 40 g melted butter can be subbed with 50 ml neutral-tasting oil such as sunflower oil
  • 1 tbsp Lemon juice ready-made is fine
  • ½ tsp Vanilla extract
  • extra butter/oil for greasing the waffle maker

Instructions

  1. Add the lemon juice to the milk and mix gently to combine. Leave for 5 minutes whilst you measure the rest of the ingredients. The milk will start to curdle, this is purposeful.

  2. Start heating your waffle maker. I like to set mine to about ⅔ power.

  3. Mix flour, baking powder, caster sugar and salt in a second bowl.

  4. Sift roughly ¼ of the combined dry ingredients into the milk mixture and stir slightly to combine.

  5. Add the butter and vanilla essence and stir again.

  6. Add the rest of the dry ingredients in three more batches, stirring very briefly each time until a batter is formed.

  7. Do not beat or work the batter vigorously. Just stare until the large lumps have gone. There may be small lumps that remain in the batter, this is good. Stop mixing the batter at this point.

  8. Your waffle maker should now be nice and hot. Take a small bit of butter on the end of a knife and drop it onto the hot plate of them waffle maker. Use a silicone pastry brush to brush the melted butter on both the top and bottom plates of the waffle maker.

  9. Use a ladle or a measuring jug to transfer some of your waffle batter to the waffle maker and close the top.

  10. After a few seconds your waffle maker should start to produce steam. Find a comfy seat and watch the steam. This is your sign for how long they need to cook for. Whilst the waffle maker is producing steam, the batter is still cooking and releasing excess moisture. Do not open the waffle maker until the steam has stopped, otherwise half of your waffle will stick to the top plate of the waffle maker.

  11. Once the steam has stopped, open the waffle maker and admire your waffle.

  12. Make more.

Recipe Notes

These waffles freezer very well. Separate with small pieces of greaseproof paper and place in a bag or container to freeze. Toast directly from frozen for a quick breakfast.
