Mild curried potato salad that takes its lead from Coronation Chicken. Can we served warm, or cold for picnics and buffets.
Coronation Potato Salad

Ingredients
- 1 kg potatoes Cut into 2cm cubes
- 100 g vegan mayonnaise
- 100 g Greek yoghurt
- 3 tsp mild curry powder
- ½ tsp ground cinnamon
- 90g pouch mango puree I use Ellas Kitchen
- 3 tbsp sultanas or raisins
Instructions

Boil potatoes until tender, then drain.

Combine all other ingredients apart from Raisins in a bowl and mix well.

Stir sauce through the potatoes.

Add raisins to finish.
