Coronation Potato Salad

Mild curried potato salad that takes its lead from Coronation Chicken. Can we served warm, or cold for picnics and buffets.

Coronation Potato Salad

Ingredients

  • 1 kg potatoes Cut into 2cm cubes
  • 100 g vegan mayonnaise
  • 100 g Greek yoghurt
  • 3 tsp mild curry powder
  • ½ tsp ground cinnamon
  • 90g pouch mango puree I use Ellas Kitchen
  • 3 tbsp sultanas or raisins

Instructions

  1. Boil potatoes until tender, then drain.

  2. Combine all other ingredients apart from Raisins in a bowl and mix well.

  3. Stir sauce through the potatoes.

  4. Add raisins to finish.
