Veggie Balls, Mash & Creamy Gravy

Ingredients

Veggie Balls

  • 1 Can Chickpeas drained & rinsed
  • 160g Packet Sage & Onion Staffing mix made up as per pack instructions
  • 50 g Cream cheese
  • 40 g Grated cheese
  • 4 tbsp Plain flour

Mash

  • 500 g Potatoes
  • 100 ml Whole Milk

Gravy

  • ½ Small Onion Finely chopped or grated
  • Vegetarian gravy granules
  • 4 tbsp Single Cream
  • 1 tsp Mixed herbs

Instructions

Make The Veggie Balls

  1. Set oven to 200℃

  2. Crush the chickpeas with a fork or potato masher, or in a food processor.

  3. Add the chickpeas, already made-up stuffing mix, soft and grated cheeses into a bowl and mix together.

  4. Add plain flour a tablespoon at a time until mixture is firm enough to roll into small balls.

  5. Roll into small balls and place on a lined baking tray.

  6. Place in oven until browned, 15-20 minutes

Make The Mash

  1. Cut potatoes into equal sized chunks and place in a. pan of cold water. Bring to the boil and cook until tender.

  2. Drain using a colander and set the colander above the pan, using the residual heat to dry the potatoes.

  3. Tip potatoes into the pan and mash until smooth.

  4. Add milk to soften potatoes further and add to the creamy texture.

Make The Gravy

  1. Fry the onion until translucent.

  2. make up gravy as per instructions, add the onion and herbs and mix together.

  3. Just before serving, add cream.
