Panelle Alla Ceci & Yoghurt Dip

Panelle Alla Ceci are a popular Sicilian dish of tasty little chickpea and red pepper fritters. They make a perfect finger food for taste explorers and are served here with a cool Greek Yoghurt dip

Ingredients

For The Patties

  • 2 tins Chickpeas drained
  • 1 Red Pepper diced
  • ½ Onion diced
  • 1 clove Garlic finely sliced
  • 70 g Plain flour
  • 60 g Cheese finely grated
  • 2 tsp Cumin
  • 4 tbsp Water

For The Dip

  • ½ Pot Plain Greek Yoghurt
  • ¼ Clove Garlic
  • ½ tsp Green herbs
  • tsp Salt

Instructions

  1. Fry the onion and red pepper in some oil until the onion has turned translucent and sweetened.

  2. Meanwhile, add yogurt, a pinch of salt, ¼ clove garlic and some herbs to a food processor and whizz up into a simple tasty dip. Decant into a bowl. Do not rinse food processor as the remaining ingredients will just add flavour to the patties.

  3. Add the garlic and continue to fry until browned.

  4. Add vegetables and all other ingredients to a food processor and pulse until combined. The mixture should be mashed but does not need to be entirely smooth.

  5. Heat oil in a frying pan whilst forming the mixture into flattened patties.

  6. Fry the patties on each side, leaving them to cool on kitchen towel.
