Spinach & Chickpea Waffles

Ingredients

  • 200 g Chickpea (Gram) flour
  • 200 g Plain Flour
  • 50 g Cooked spinach finely chopped in food processor
  • 600 ml Whole milk
  • 80 g Unsalted butter Plus extra for greasing waffle iron
  • 2 tbsp Baking Powder
  • 1 tsp salt
  • 2 tbsp Onion granules
  • 1 tbsp Caribbean Curry Powder
  • 1 tbsp Curry Powder
  • ½ tbsp Turmeric
  • ½ tbsp Garlic powder
  • 2 tbsp Lemon Juice

Instructions

  1. Add all dry ingredients to a bowl and stir to combine

  2. Heat butter in a small saucepan to melt, and add this to the milk

  3. Start to heat waffle iron

  4. Add spinach, milk and butter mixture to dry ingredients, and whisk. Do not whisk until smooth. Some small lumps are expected, and if you whisk until smooth you will have overworked mixture.

  5. Add the lemon juice and whisk for a few seconds more to combine.

  6. Grease waffle iron with melted mixture and cook waffles, each using one ladle of mixture. Wait for steam to die down before opening waffle iron. Serve immediately, or store to freeze and reheat.
