Savoury gram (chickpea flour) waffles with onions and spices
Fry onion in half (1 tsp) of the oil until starting to soften and turn translucent. Add a splash of water to the onion, stir, and place a lid on the pan to simmer on low and continue to soften and brown the onions.
Once the onions are fully cooked and the water evaporated, add the garlic and cook for a further minute, stirring continuously. Remove from heat.
Add all of the dry ingredients to a large mixing bowl and stir to distribute spices.
Add 300ml of the water until a medium batter is achieved. If required, add the rest of the water until you have the desired consistency.
Add the onions and garlic and stir to distribute
Use a pastry brush to coat the plates of the waffle maker with some of the remaining oil. Ladle in the required amount of batter and cook until starting to turn golden brown.
Eat immediately, or seperate and cool to freeze. Reheat in an oven or a toaster.
